So last year for David’s Dad’s birthday we made a cake with a jayhawk on it, Kansas’s mascot, and his Dad’s favorite team. This year we decided to try fondant, we made marshmallow fondant because we didn’t have time to let the other kind rest, nor did we have glycerin. It required a lot of kneading and a big mess but turned out pretty good. I used the best birthday cake recipe from smitten kitchen for a yellow cake which turned out good and we made three layers with buttercream icing. We did random cut outs because we didn’t have any cookie cutters. There were 54 dots on the cake to reflect his dads age. It was a lot of fun but next time I really want to try out the “rolled fondant” recipe.
