It seems like I’ve definitely been cooking much more than I’ve been “restauranting,” but oh well once my boyfriend moves back to Philadelphia there shall be more going out. We had leftover ricotta from Manicotti I made so I used it to make this fresh and easy no bake lasagna. It was pretty good, if I made it again I would put cut up pieces of basil between every layer for sure ! I also made these smoked salmon rolls stuffed with an avocado/cream cheese, dill spread on a cracker. The smoked salmon rolls will DEFINITELY be making repeat appearances in the future. I think I rolled them the wrong way and obviously didn’t add the sesame seeds (too lazy) but if I made them for someone or a party I would.
