I’m not quite sure why I was craving this but I decided we NEEDED to make Shrimp and Grits this week, Cajun style. We took a nice Sunday trip the Reading Terminal and picked up all of the ingredients and then made it using this recipe and his cheesy grits. We used instant grits because they didn’t have the stone ground ones, but still cooked them for about 45 minutes and they turned out quite well. I think we would have gotten a little more authenticity with the stone ground grits so I will have to try them out next time we are at a better grocery store ! In my words while eating the dish ” it’s not life changing but it’s good.” I will definitely make this recipe again, but next time I would probably only use 1 lb of shrimp… it was A LOT of shrimp and has provided 2 days of leftovers. We also used half fresh shrimp half frozen and to no one’s surprise the fresh shrimp were much better. My creole craving has been satisfied for now.
