It was Taco Tuesday at the Walters’ household and I’m sure many other places. I picked up some ground beef from my favorite organic spot in Reading Terminal, Giunta’s. I used a cheesy taco seasoning by Old El Paso which I mixed with half and half for lack of milk (I swear I’m making my own taco seasoning soon sans fake cheese). Each taco was topped with queso frescco, sliced avocado, frisee lettuce, chopped tomatoes and onions, lime and a chipotle mayo sauce. They were delicious, well balanced, and the hubby was happy, what more could you ask for on a Tuesday night.
