I knew the Storm Jonas was coming and we have had a banana turning that perfect awful black color you want for banana bread bananas all week long. My husband picked up a few more and I went to work. I made a half recipe of Fannie Farmer’s Kona Inn Banana Bread which made 1 loaf pan and a mini muffin tray’s worth. I put the walnuts in my mini food processor and chopped for a few seconds till they were a bit bigger than breadcrumbs. They added a nice crunch. The bread was moist and sweet and can work as dessert or breakfast ! It is delicious by itself, with cream cheese or butter.
