One of my favorite food blogs is Lady and Pups, it is a must read and see. She makes the most delicious and exotic food and is a wonderful writer. She knows how to reel you in, make you feel like she’s talking to you at a slumber party about her life, and lays out recipes in an easy format. I’ve been eyeing these almond shortbread sandwich with jasmine tea icing for a while now and decided to give them a go. I halved the recipe because I was experimenting and didn’t have anyone except my husband to share them with. Everything was going well until I got to the grinding-the-tea part. I don’t have a grinder of any sort so I tried using my Vitamix, but the tea was too light so I thought I would add the confectioners sugar …. not remembering that the recipe said the jasmine needed to steep in the milk. WHOOPs. It didn’t taste enough like jasmine or make a paste so I ended up adding almond extract to my icing. I’d like to try with matcha since it is already ground up although once I get a grinder I’ll be sure to try again! These are melt in your mouth butter cookies with insanely fluffy not-too-sweet buttercream icing. You could easily fill these with whatever you want but I like the idea of using jasmine or maybe even honeysuckle if possible. mmmm the flavor of Spring.
