A few weeks ago David and I had the rare (these days) relaxing Friday night. As long as we’ve been together it has been our routine to do a movie night or binge the current TV show. Lately with all of the house business and crazy summer life we haven’t had one. When we finally had one I spent the day brainstorming what I wanted to make, was it filet mignon…a yummy salad…penne alla vodka…then it hit me light a lightning bolt, Gouda Mac n Cheese. I searched the web and found this recipe, then altered it a little to add more flavor and of course the key ingredient and a chef’s best friend. Bacon.
My first stop was Reading Terminal to grab some cheese at Downtown Cheese, my favorite cheese shop because they are so nice and usually give samples without prompting. While I was buying my smoked gouda I also decided we were in need of a little treat, some creamy brie. My mom recently brought some to the Pocanos and in front of the cheese counter I couldn’t resist. I tried about 4 different types and decided on one that was a little stinky , a lot salty, and much creamier than a normal wheel for our appetizer. After that I headed to Guinta’s to buy my bacon and then home to start cooking ! I spiced up the original recipe a bit and next time might add some breadcrumbs as well. It spent a little too much time under the broiler on high but still tasted delicious. So without further ado Gouda Mac N Cheese
**Feel free to use less cayenne and chili powder if you don’t like it hot and top with Sriracha if you like !
