My husband was at Reading Terminal last week picking up some meat and last minute veggies when he saw pints of blueberries for $1.99, I told him to grab 3! I decided I wanted coffee cake, but the kind with a big thick crumb, so adapting two recipes I came up with my own and it was delicious ! The crumb takes up about half the space in the pan. Its that big crumb topping everyone wishes is on top of their pie or coffee cake, we all know the crust, crumb or muffin top are the best parts. It is a moist, heavy cake on the not-too-sweet side with a hint of lemon for brightness and balance. The crumb is also not too sweet although next time I think I will add some nutmeg. I also made muffins but completely forgot to take pictures. Definitely put this in the fridge otherwise it gets moldy quickly. Give this a try before summer is out, you’re friends and family will thank you!
